It’s that time of year when the fresh fruit is just beginning. Apricots are one of the first to appear at roadside stands, gracing the tree limbs with a touch of gold. Our household is a big fan of apricot pineapple jam. We happily carried home boxes of warm apricots, the boys eating as many as their stomachs could hold. Then began the process of turning the abundance into lovely jars of pure sweetness. After 18 jars, we made the rash decision to dry the rest in the food dehydrator. Big W, 5 years old, has an ever growing list of things to make with them. Apricot pie, apricot pancakes, apricot syrup, etc. But for this year, we can check storing apricots off the list.
